The vendor shall provide a registered dietitian to implement a nutrition program, conduct test dietary operations, oversee and assess facility dietary operations, draft and review policies and procedures, create a resident diet manual and recipes, conduct nutrition assessments, review and alter menus, assess and document residents' nutritional status, observe meal preparation, perform kitchen inspections, develop and present in-service education, assist with regulatory surveys, and comply with HIPAA. The dietitian must be available a minimum of 22 hours per month, not exceeding 8 hours per week, Monday–Friday 8:00am–4:00pm, excluding state holidays.
