Louisiana authorizes Alternative Oyster Culture (AOC) — off-bottom and other non-traditional oyster farming — through the Department of Wildlife and Fisheries under La. R.S. 56:431.2. AOC operations use cages, baskets, longlines, and other gear placed over leased water bottoms.
