The contractor shall provide all management, personnel, supervision, equipment, supplies, and transportation necessary to deliver a full-service food operation for the NMJCA and NMNGYCA. This includes preparation and service of three meals per day (breakfast, lunch, and dinner) and a supplemental snack program, seven days a week, for the duration of residential program cycles. The contractor must also cater special award functions. Meals must meet specific nutritional targets (e.g., 2,800 kcal/day base, 3,200 kcal/day with snacks, protein minimums, fiber requirements), comply with USDA meal pattern requirements for NSLP/SBP reimbursement, and be culturally responsive to New Mexico's Hispanic/Latino and Native American/Indigenous communities. The contractor must hold a current NMED food service permit, maintain a HACCP plan, have ServSafe certified supervisors on each shift, and manage allergens. Performance monitoring, monthly reporting, and corrective action plans are required.
