Utah Code 32B-6-304(4) sets the bond amount for a limited-service restaurant license at the penal sum of $5,000, and 32B-6-304(1) routes the applicant through Chapter 5, Part 2, the Retail Licensing Process. Section 32B-5-204 governs the instrument itself: a retail licensee posts a cash or surety bond in the amount specified for the licence type, payable to the department, in a form approved by the attorney general and conditioned on faithful compliance with Title 32B and commission rules; it may not be withdrawn while the licence is in effect or a revocation proceeding is pending, a cancellation caused by the licensee's negligence may draw a $300 reinstatement fee, and the department may claim for money owed without first revoking the licence. A limited-service restaurant license expires October 31 each year and is renewed by September 30; the nonrefundable application fee is $330, the initial licence fee $1,275 (prorated) and the renewal fee $750. A full-service restaurant, bar establishment, beer-only restaurant or on-premise banquet licence carries a different penal sum — confirm your class before you buy.
